Coconut Smoothie

1 large banana

4 cubes ice

¼ cup water / coconut water (without added sugar, free of preservatives. I recommend C Coconut water)

¼ tsp vanilla extract

1 tsp cinnamon

1 tsp raw honey

1 -2 tsp green super food powder (spirulina/ barley grass/ chlorella/ wheatgrass)

1 tbsp chia seeds

1 heaped tsp cacao powder (optional)

½ cup coconut milk

Blend and enjoy!

Coconut Pancakes

Makes around 6 pancakes

2 eggs

1 tsp xylitol

2 tbsp coconut oil, melted

additional 1 tbsp coconut oil

2 tbsp coconut milk

1/8 teaspoon baking powder

1/8 teaspoon celtic sea/ himalayan salt

2 tbsp coconut flour, sifted

¼ tsp vanilla extract

Mix together eggs, oil, coconut milk, xylitol, vanilla and salt.

Combine coconut flour and baking powder in another bowl and thoroughly whisk into batter.

Heat 1 tbsp oil in a fry pan.

Spoon batter onto hot pan making pancakes around 6-7cm in diameter. Batter will be thick but will flatten out when cooking.

Who should use coconut oil?

Provided there are no reactions once consumed, anyone can enjoy the benefits of coconut oil. Including babies, through to the elderly and immune compromised.

Start slowly, for adults 1 tsp per day and you can work up to 1 tbsp daily maintenance. Athletes or ill patients can get a high dose of coconut oil through 3 tbsp per day.

You can cook with coconut oil. It has the great benefit of being stable at high temperatures, preventing the conversion of its chemical structure to a transfat. Transfats are created when any other oil is heated through cooking. Being a saturated fat, coconut oil can withstand any oxidative damage that commonly occurs when other oils are heated.

Additionally coconut oil can be added to meals, smoothies or recipes; straight off the spoon or added to warm water and drank through the day. It melts at around 24 degrees C, so you will need to keep it out of the fridge otherwise it will be too hard to use.

Another use for coconut oil is for your skin, in place of lotions and moisturisers.

Be sure to use unrefined/ cold pressed coconut oil, organic if possible.
